Barang Kitchen x Bokman

Back in June we took Nine Tree Hill on a journey to Cambodia, collaborating with one of Bristol’s own - Tom Geoffrey of Barang Kitchen

After his latest success at Oranj in London, Tom joined us at Bokman to showcase the distinctive flavours of Cambodia. He created his own spin on our classic ‘Tongdak’, stuffing the chicken with Thai sticky rice and Cambodian Red kreung curry paste along with Makrut lime leaves. He then regularly basted the chicken with the same paste which had been cooked out in coconut cream, palm sugar and fish sauce, as it spun over those hot ass flames.

Yes, it was as good as it sounds.

Raw aged sirloin, sea bass crudo, were some other menu highlights, and of course, no Bokman feast would be complete without a soft serve finisher, this time with Galanga and Markut lime soft serve.
